SE LA RISTORAZIONE FOSSE IL GIOCO DEL CALCIO

Credo che una squadra di calcio sia la metafora migliore che possa rappresentare una brigata di cucina e tutti i soggetti che riguardano il mondo della ristorazione.
Innanzitutto abbiamo la squadra ufficiale, ovvero gli undici che scendono in campo, dal portiere all’attaccante. La riserva che sta in panchina, generalmente 5/6 giocatori.
Più in alto abbiamo l’allenatore, e sopra a tutti il presidente della squadra.
In ultimo non possono mancare i tifosi sugli spalti e l’arbitro.
Vediamo uno per uno chi sono nel ristorante i nostri giocatori e perchè esprimono perfettamente gli stessi ruoli e le stesse dinamiche del gioco del calcio.

LA SQUADRA UFFICIALE:
Un ristorante di medie grandezze può facilmente contare su 11 dipendenti. Come nel calcio c’è l’ATTACCO e la DIFESA, nella ristorazione abbiamo la macro suddivisione tra SALA e CUCINA.
Per come la vedo io, la difesa è la cucina, mentre l’attacco è la SALA.
Difatti una cucina che sa fare il suo dovere non farà mai perdere la propria squadra, anche se c’è sempre la possibilità di pareggio.
Esempio: andiamo a mangiare in un ristorante dove il servizio è scarso, ma si è mangiato bene. Non riempiremo di elogi per qualche pecca in sala, ma nemmeno ci sentiremo di giudicarlo negativamente. Il classico commento:
“Camerieri improvvisati, “però” abbiamo mangiato molto bene”.
La sala è l’attacco. Con una cucina valida che non fa errori e non riceve goal, la sala può far vincere la partita.
Spesso sento dire: se la cucina è buona ma la sala è pessima il ristorante più di tanto non può andare bene (se pareggi sempre non lo vinci il campionato), viceversa, un bravo cameriere può riuscire, entro un certo limite a recuperare i difetti o problemi della cucina. Ecco, quel rimediare sono i goal di differenza che alla sala può permettere di vincere anche se la cucina ha fatto qualche papera (in gergo tecnico “è andata in merda”).
La nostra squadra ideale sarà quindi composta da:
– chef portiere
– maitre attaccante
Più tutti i ruoli che se ben definiti, creeranno un gioco di squadra efficiente. Viceversa, come nel gioco del calcio, dove non c’è la squadra, emergeranno i personalismi.

LA PANCHINA
Qui troviamo gli extra. Un paio di cucina, altri 2 per la sala, e magari un jolly tuttofare (centrocampista?). Così come nel calcio chi comincia dalla panchina può diventare titolare, così un’extra può passare all’ambito contratto fisso, facendosi valere…o aspettando che si liberi un posto in prima squadra.

Qui in Italia questa figura non c’è nel ristorante. Si perchè l’allenatore nel nostro caso assomiglierebbe in tutto e per tutto al restaurant manager, che già il fatto che usiamo un nome inglese per definirne il ruolo, ci fa capire che non siamo abituati ad avercelo in casa a dispetto per esempio di tanti ristoranti anglosassoni.
Generalmente, da noi, questo ruolo è ricoperto da un leader della squadra che organizza la strategia di gioco.

IL PRESIDENTE
Ovviamente qui si parla del ristoratore, ovvero il proprietario dell’attività. Tra le sue più importanti prerogative c’è la decisione della campagna acquisti. Come nel calcio, certi fuoriclasse tocca pagarli e il mercato generalmente si decide a maggio e settembre, ovvero all’inizio e alla fine della stagione estiva.

TIFOSI
I tifosi sono i nostri clienti , che a volte possono diventare dei veri seguaci, aficionados sette giorni su sette. Ci sono clienti che vedi solo il sabato sera (come chi segue la propria squadra solo il fine settimana aspettandosi una vittoria) e chi invece conosce il tuo menù meglio di te.
C’è chi pretende la vittoria, perchè ha pagato il biglietto e chi tutto sommato va allo stadio per passare una domenica con la famiglia. Allo stesso modo il cliente esigente vorrà il meglio, mentre c’è il cliente della domenica che gli basta una pizza mediocre, birra e cola alla spina.
Comunque se si vince si fa sempre contenti tutti.

L’ARBITRO
Qui potremmo sbizzarrirci. Una volta avremmo pensato ai critici culinari. Quelli veri. Quelli che con un articolo su noti giornali e guide potevano stroncare un ristorante o innalzarlo a nuovo tempio del gourmet. Oggi, nell’era dei social, tutti sono diventati giudici e critici.
L’arbitro nel calcio è quello che, se ti assegna un rigore favorevole sei contento e dici che è bravo, mentre se il rigore te lo da contro allora:
“il sistema è marcio!”
“è un venduto!”
“incapace!”.
Un pò come quando i vari ristoranti pubblicano orgogliosi gli elogi ricevuti da un cliente su Trip Advisor, mentre quando invece il cliente di turno dice peste e corna sullo stesso sito, allora il famoso “gufetto” diventa cornuto come l’arbitro.

    Primo fra tutti il ristoratore che spesso è anche manager, chef, maitre e tuttofare.
    Come se il presidente fosse anche allenatore, giocatore e la sera prima di andare a casa desse una pulitina agli spogliatoi.

    Comportamenti del genere si riversano generalmente nella gestione dei collaboratori, evitando di definire i ruoli e pretendendo che tutti facciano tutto.
    Così, spesso, invece che di fronte ad una squadra di calcio, ci si ritrova di fronte all’armata Brancaleone.
