Ciao collega, in questo momento in cui molti di voi scrivono e firmano lettere dirette al premier Conte, io ho pensato di scrivere una lettera a te, con la speranza che, se sarai concorde rispetto ai punti espressi, vorrai firmarla, e condividerla.

Facciamo un passo indietro.
Cinque anni fa, il 10 giugno 2015.
L’obiettivo voleva essere alto, creare un’ordine professionale del settore capace di autoregolarsi e autodeterminarsi, perché l’unica cosa chiara che ho dall’inizio di questa avventura è che nessuno ci salva, siamo noi a doverlo fare.
Oggi, a distanza di quasi 2 mesi dal lockdown che ci coinvolge tutti, quell’idea di presa di coscienza sembra ancora attuale.

L’obiettivo alto si tramutò inizialmente però in una pagina facebook capace di strappare sorrisi e a volte piccole riflessioni.

Già dopo un anno però molti di voi volevano riflettere di più. Così nacque il blog, per raccontare e affrontare più seriamente argomenti come il lavoro usurante, le difficoltà burocratiche del settore fino al crescente problema di turnover, con la carenza di personale ogni estate sempre maggiore.

Ma 3 anni fa, con il primo vero OCCCADAY, ci fu la nostra prima vera azioni. In migliaia indossaste prima bracciali gialli autoprodotti e l’anno scorso 1300 di voi, attraverso il crowfunding indossarono un braccialetto, lo stesso, dal cuoco italiano che viveva in Giappone e se lo era fatto spedire per tempo, alla brigata del piccolo paese che lavora solo d’estate su una delle tante stupende spiagge che il nostro paese ci offre.

L’anno scorso iniziavamo a crederci. A credere di poter pensare di essere un’unica brigata. Questo era e stava diventando il nostro motto.

Niente camerieri contro cuochi che si scannano per qualche decina di euro di mance.
Niente dipendenti in combutta con i titolari, colpevoli di non garantire stipendi onesti, ma altrettanto spesso non responsabili di questo.
E se questa responsabilità c’era e tutt’ora c’è, allora è il caso che ognuno se ne prenda una parte, perché se da anni, anzi decenni, tutti noi parliamo del problema del costo del lavoro e di un ccnl non adatto ad ogni nostro comparto, è giunto il momento di capire che questo non è un problema solo del titolare, ma di tutti.

Ci sono molte cose che si possono e si devono chiedere al Governo.
Fosse per me ne chiederei una soltanto: la costituzione di un tavolo di discussione attorno al mondo della ristorazione, i già da noi definiti STATI GENERALI DELLA RISTORAZIONE.
Non come evento d’emergenza, ma di costanza.
Perché passato questo momento, i problemi che avevamo ieri resteranno e probabilmente ne arriveranno di nuovi.

Ma visto che tutti ora scrivono e firmano lettere a Conte, con dieci o più richieste, io ho pensato di scrivere una lettera a te, affinché anche tu prenda un impegno per il futuro, per quanto concerne le responsabilità che fino ad ora tu, e tutti i nostri colleghi hanno fin’ora eluso.

1) CONTRATTI REGOLARI.
I contratti irregolari richiedono due attori: un contraente e un ricevente. Se da una parte il datore propone lavori a tempo pieno al netto di contratti part time e una parte del pagamento in nero, dall’altra c’è un dipendente che accetta queste condizioni.
Dobbiamo interrompere questo circuito.
Al dipendente che si giustifica dicendo che – “In qualche modo devo campare” – ricordiamo che la sua motivazione è la stessa del datore di lavoro che lo propone. In qualche modo lui deve far quadrare le spese.
Finché entrambe le parti esternalizzeranno sui contratti la gestione economica dell’attività, non potremo pensare di sbloccare questo ostacolo.
Ti chiedo di non accettare ne proporre più contratti che non siano in perfetta regola.

2) COMPETENZA.
Ognuno deve avere le sue per poter pretendere. Se il punto 1 concerne i diritti, non si può pensare di avvalersene senza ottemperare ai propri doveri. Ognuno ha i suoi.
Il dipendente deve essere competente e cosciente della propria professione per pretendere di essere pagato come professionista, così come il titolare deve essere competente in materia gestionale se vuole avere la titolarità per essere la guida. Per comandare bisogna stare al seguito.

(Nb: si impara a cucinare e a fare i cappuccini esattamente come si impara a gestire un’azienda. I dipendenti non sono gli unici a doversi formare.)

Oltre al ritorno personale da una maggiore competenza, ne beneficia anche il comparto in cui operate. L’Italia sta iniziando a usare i verbi al passato quando parla di professionalità in questo settore.
“Eravamo” quelli migliori.
Non possiamo pensare di campare su quello che i nostri genitori e nonni sono stati prima di noi. Dobbiamo dimostrare di essere migliori di loro, per noi stessi e per il bene della categoria, se sentiamo di appartenervi.

3) RISPETTO.
I like sui social sono importanti come qualsiasi elemento che influisca nella comunicazione e percezione. Siamo fatti di questo ed è inutile negarlo. Cambiano gli strumenti ma non il senso di riconoscenza che cerchiamo, tutti.
Ma i numeri sono asettici. I like non raccontano le emozioni. Questo nuovo mondo, il mondo social, ci ha allontanato da virtù ed etiche di cui siamo stati e dobbiamo tornare a essere interpreti e rappresentanti.
Uno su tutti il rispetto.
Rispetto verso chi vi offre lavoro.
Rispetto verso chi vi offre il suo tempo.
Rispetto per chi vi paga lo stipendio (il cliente!).
Rispetto per chi coltiva la terra, pesca nel mare, alleva nei campi.
Rispetto per la natura, le tradizioni, la storia.
Rispetto verso il sacrificio.
Rispetto verso il coraggio.
In ultimo, ma solo per dargli la massima attenzione, rispetto per voi stessi.
Sacrificatevi, ma per voi stessi.
Non siamo carne da porre su un’altare sacrificale.
Che sia il titolare, lo chef o lo Stato, nessuno può chiedervi sacrifici che non siate voi a voler fare.
Se lo fate per gli altri deve succedere perché vi sentite parte di essi. Ma accertatevi che la cosa sia reciproca.

4) FUTURO IN PRESTITO.
Non abbiamo ereditato dal passato, ma preso in prestito dal futuro. L’egoismo non può e non deve appartenerci.
Siamo l’elemento più scostante e al contempo presente nella società. Quanti locali aprono e chiudono ogni anno nella vostra città? Eppure le facce sono sempre le stesse. Cambiano le insegne, ma a lavorare restano le stesse persone che girano, cambiano.
Ieri camerieri in quel ristorante, domani barista nel bar accanto.
In questa incertezza continua, di mercato, di lavoro, di condizioni per poter costruire, abbiamo tutti acuito la tendenza a consumare.
Oggi ci sono, domani chi lo sa.
Magari cambio locale, oppure città.
Ovvia conseguenza di questo comportamento è un ristoratore che con difficoltà investe sul proprio personale. Ma se nessuno investe sul personale e questo continua a cambiare di casacca, tutti continueranno ad avere personale nuovo e livello stagnante di crescita.
Ma se la vediamo dal punto di vista opposto, le cose non cambiano.
Il dipendente che sa di dover andare via a fine anno, passerà gli ultimi mesi a fare il suo, non curandosi di dare, nemmeno di mantenere.
Pensate di andare a lavorare in un nuovo ristorante e trovare che chi sostituite, proprio come voi, si è disinteressato a fare il proprio lavoro.

Se vogliamo avanzare verso il futuro, qualunque esso sia, serve maggiore altruismo. Con l’egoismo non faremo altro che restare fermi al presente, mentre gli altri continueranno a superarci.

5) UN’UNICA BRIGATA.
“Se vai da solo vai veloce, se vuoi andare lontano vai insieme”
Andare da soli ha permesso a molti di noi di raggiungere velocemente tanti obiettivi.
Penso banalmente a quei colleghi che in questi anni, girando il mondo, facendo tante esperienze e investendo su se stessi, hanno potuto costruire un curriculum di tutto rispetto.
Mi chiedo però quanto quel curriculum sia spendibile in Italia.
Quanti possono oggi usufruire della loro esperienza sul lavoro, sia a livello di realizzazione personale che ovviamente di compenso nel Belpaese?
Che senso ha essere veloci per poi correre su pochi metri?
Perché oggi questa è l’Italia.
Dobbiamo porci l’obiettivo di mete lontane e per raggiungerle, capire che dobbiamo unirci, dando a questa unione la priorità.
Far parte di un insieme significa poter destinare gli stessi sacrifici che prima abbiamo fatto per essere veloci, per andare lontani.
Ma serve fiducia.

La fiducia richiede pazienza e piccoli passi.
Firmare questa lettera è il primo.

Non dobbiamo dimostrare qualcosa al Governo.

    La vostra esposizione è condivisibile in toto, ma presuppone due condizioni:
    1) Che ci sia una vera serietà e unità di intenti che in questo mondo fatto di tante individualità è difficile seppure impossibile.
    2) Il bisogno di lavoro impedisce il rifiutare le imposizioni a volte ricattatorie del datore di lavoro, l’obbligo di accettare qualsiasi imposizione al posto di un niente è condizione difficilmente estirpabile.
    La politica che con le sue leggi e il controllo avrebbe dovuto essere il regolatore e difensore del lavoro è stata un fallimento, ed ha lasciato solo il lavoratore in una contrattazione sfavorevole.
    comunque per quello che mi riguarda firmo volentieri lavostra petizione pur con i due distinguo.

Mi auguro che si prenda coscienza del fatto che per l’80% della forza lavoro il settore sia in mano a personale malpagato e spesso dilettante, che manca un sindacato di categoria e che sia praticamente impossibile sperare in un contratto che superi i 2 mesi. Questo settore ad oggi non permette di avere una stabilità economica, ne al giovane, ne al dipendente con 20anni di esperienza. Non è minimamente riconosciuta la professionalità come valore aggiunto, anzi, diventa un costo troppo oneroso da sostenere. Amo questo mestiere ma non mi sta restituendo nulla dei 20 anni di vita che gli ho dedicato.
