Perchè c’è lo CHEF STELLATO e non c’è il CAMERIERE STELLATO?
Mi sono posto questa domanda mentre parlavo con un collega (Lorenzo Costa) di stelle e ristoranti. Le domande più banali spesso riservano risposte sorprendenti.
Sul perchè la Guida Michelin non dia maggior rilievo mediatico alle figure di sala ci piacerebbe in futuro scrivere qualcosa (magari chiedendolo direttamente a loro), ma ciò che ci piace fare ora è immaginare.
Immaginiamo cosa accadrebbe se esistessero i DIRETTORI DI SALA (o maitre se preferite) stellati.
Innanzitutto un premio simile, indicherebbe una responsabilità diretta da parte della sala nel raggiungimento di tale successo, al pari di un menù ricercato e di materie prime di alta qualità.
Ma tralasciando la parte logica e razionale, proviamo a immaginare cosa accadrebbe nel pensiero comune se esistesse un simile riconoscimento.
Probabilmente i vari blog, portali online, esperti di webmarchetting (chi fa marchette sul web), siti del settore quindi ma anche testate nazionali in cerca di qualcosa da dire di nuovo, scriverebbero i loro primi timidi articoli al riguardo.
A quel punto i mass media inizierebbero a nuotare come squali intorno al mondo dei camerieri, alla ricerca del loro fuoriclasse, quello che spacca lo schermo, il CRACCO DELLA SALA insomma (o lo Chef Rubio, dipenderebbe dallo stile).
Trovata la loro STAR (e prima di loro un’agente capace di promuoverlo) ecco che inizierebbero a spuntare i primi sponsor. Tra i primi ci vediamo bene un’azienda di scarpe! Quale miglior sponsor ci potrebbe essere, per un’azienda di scarpe eleganti, di un Direttore di Sala? La rappresentazione di eleganza e praticità (che tradotta vuol dire comodità).
Dalle scarpe il passo è breve su camicie e outfit generale.
Ma non basta.
La nostra nuova star può certamente diventare punto di riferimento per chiunque voglia diventare un personaggio di successo. Da sempre riferimento del cliente, ora che il CAMERIERE diventa ufficialmente attore protagonista di quel palcoscenico che naturalmente gli è stato costruito intorno ne diventa pilota, guida. Lui decide e comanda su tutti (ci vorrà una star con un Ego smisurato…ma non sarebbe difficile trovarla nel mare di primedonne che ci sono oltre il pass).
Con tutti questi guru che ora emergono sul web, che vogliono insegnarci come si guadagnano soldi, come si può essere felici, come si vive, come si sta al mondo, la figura distinta, professionale, accogliente di un direttore di sala, certamente saprà indicarci la via universale del come si diventa direttori della propria vita e manager della propria brigata, che sia questa la propria famiglia, il proprio gruppo di lavoro, la squadra di calcio di cui si è capitani, il team di soft air del fine settimana.
Un one man show amato da tutti, che tutti vorrebbero nel salotto del proprio programma, vuoi oggi per dare consigli su come stare al ristorante o come vestirsi per la prima serata del Grande Fratello TripAdvisor.
Finalmente l’attenzione che desideravamo!

Non so per quale motivo la Guida Michelin non abbia creato una categoria di premi a parte per la sala, nè tantomeno per quale motivo non si parli mai di Maitre/Direttori di Sala stellati, ma forse non mi interessa più.
Anzi. Speriamo proprio che non avvenga.
Forse è un bene che rimaniamo in disparte.
Forse un giorno ringrazieremo i cuochi di essersi fatti carico dell’onere mediatico e di averci lasciato l’onore delle armi:

ritengo che anche se indirettamente la guida premi già la sala e tutto il suo comparto, poichè nel momento in cui il ”menù stellato” non sia accompagnato da un servizio impeccabile questa non viene assegnata. Il nostro è un lavoro che si svolge ”dietro le quinte” come se fossimo i registi di uno spettacolo…. e sapete che vi dico…. preferisco un lavoro silenzioso ad un alto clamore

Perché, anche se capisco che è un modo di dire, il suo “dietro le quinte”, posso assicurarLe che, il nostro, è il debutto, non un dietro le quinte.
Noi ci mettiamo la faccia, noi ci mettiamo la buona parola quando qualcosa non viene apprrzzato, noi ci mettiamo il sorriso, noi ci mettiamo la grazia nel descrivere il piatto, noi ci mettiamo la pazienza nel sorbire tutti i commenti (non sempre positivi), noi ci mettiamo in gioco per recuperare con amari, limoncelli e grappe, e potrei stare ore a scrivere. Credo che entrambi i ruoli debbano andare a braccetto, ma quel tocco in più lo abbiano noi.
Ecco perché, forse, non è stato ideato un programma tv sui camerieri, perché, in fondo, noi la marcia in più già la abbiamo. 😉
