“Ho fatto il cameriere per undici anni.
Fra le tantissime cose che ho imparato c’è questa, che il mondo si divide in due categorie: quelli che passano il piatto al cameriere, e quelli che non passano il piatto al cameriere.”

Con questo incipit inizia il post malinconico e stucchevole dello scrittore Enrico Galiano che, grazie alla strappastorialacrime dell’ex schia…ops! cameriere, raggiunge gli oltre 60mila like su facebook e 20 mila condivisioni!

Quando mai li avresti fatti questi numeri Enrico con i tuoi libri eh?

Ma torniamo al post.
Nel suddetto Enrico fa una distinzione che pone l’accento su un gesto, mai così tanto frainteso quanto estremamente snervante in alcune situazioni: il passaggio dei piatti sporchi, dalle mani dei clienti a quelle dei camerieri.

Ora, a noi di OCCCA non ci interesserebbe prendere posizione su uno dei tanti post acchiappalike che nutrono il mondo dei social ma la questione diventa virale, e non vorrei che un domani il cliente tal dei tali si mettesse a passarmi i piatti perchè ha letto il tuo post Enrico. Capisci che dobbiamo intervenire con determinazione e in maniera incontrovertibile:

NON DOVETE PASSARCI I PIATTI!

Lo ripetiamo cari clienti, tenete le mani al vostro posto e NON PASSATECI I PIATTI.

Se veramente volete distinguervi per empatia, eleganza, rispetto ed educazione ecco un breve elenco di quello che dovreste fare per agevolare il vostro sparecchiamento:

– lasciate le posate in vista e non sotto tovaglioli sporchi o incastrate come un origami tra di loro.
– scordatevi regole di galateo che richiedono la posizione delle posate in un determinato modo per comunicare a livello non verbale al cameriere se avete terminato, se siete in pausa o non avete gradito. Scordatevelo. Non le conoscono molti camerieri quelle regole ma soprattutto non le conoscono i clienti. Quindi è inutile basarsi su quella serie di norme per agevolare il nostro lavoro. Non siamo più nel novecento arcaico, potete parlare con noi, questo sarebbe molto più educato che passarci i piatti e onestamente più apprezzabile visto che certe norme erano create proprio per non far parlare i commensali con la servitù.
– evitate di cospargere il tavolo di oggetti che rendano difficile lo sbarazzo dello stesso da quello che è superfluo per la prosecuzione della vostra serata. Cellulari, giochi dei bambini, borse, sigarette. Nel momento in cui veniamo NOI, a sbarazzare il vostro tavolo chiediamo solo che questa azione sia agevolata da un tavolo tenuto in maniera decente.
– traduzione di TAVOLO DECENTE: il piatto deve essere di fronte a voi, le posate alla sua destra o sinistra o sopra, i bicchieri tendenzialmente tutti verso l’angolo destro del vostro piatto (del VOSTRO PIATTO, non del piatto di qualcun altro). In pratica la stessa mise en place di quando vi siete accomodati.
– se intendete lasciare le posate SOPRA il piatto ci teniamo a darvi questa indicazione di massima. Generalmente le posate sono prese a parte dal cameriere e accatastate su un piatto, quindi fate in modo che queste possano essere prelevate agevolmente. Evitate quindi di lasciarle incastrate dentro il piatto con residui di cibi onde evitare di farci giocare a shangai con le vostre posate e gli avanzi di pollo.

“Ma perché non possiamo passarvi i piatti?”

Perché non sapete in che modo si lavora nel ristorante in cui siete.
Non lo sapete e soprattutto non siete tenuti a sapere come si lavora in quel ristorante.
Il cameriere è pagato per farlo, voi no.

In molti casi semplicemente questo gesto a fin di bene si tramuta in un erroneo, sbagliatissimo, modo di porgere i piatti, a cominciare dal fatto che questi vengono impilati senza aver ripulito ogni piatto di avanzi e posate.
Passare al cameriere di turno una pila di piatti con in mezzo sughi, insalate, pasta, posate, etc, renderà peggiore il lavoro del cameriere che presumibilmente dovrà:
– prelevare la catasta di piatti nella speranza che niente cada nel tragitto dal tavolo alla plonge.
– arrivato alla plonge poggiare la catasta di piatti in un punto e riprenderli uno ad uno per pulirli grossolanamente prima di lasciarli ordinati nella zona lavaggio.
– TROVARE IL PUNTO D’APPOGGIO (perché se è un sabato sera, si rischia, e non poco spesso, di arrivare alla plonge che non si ha il punto di appoggio)
– distribuire quindi, lo sporco nell’umido, cicche di sigarette e altri intrusi nell’indifferenziato, posate da una parte, piatti nell’altra.

Se al cameriere invece fate fare il suo lavoro (e si spera che lo sappia fare!) lui prenderà i piatti e le posate con un preciso ordine e modalità di esecuzione, trovandosi così una pila di piatti sul braccio sinistro, accompagnato da un solo piatto di scarico dei residui e delle posate (opportunatamente distribuite a incastro).
Una volta raggiunta la plonge, il nostro cameriere potrà in pochi passaggi e senza l’ausilio di un punto d’appoggio distribuire rifiuti, posate sporche e piatti nei loro spazi e tornarne in sala veloce e senza sentire le urla del lavapiatti che chiede:
“Chi ha lasciato questo casino??!”

Luis Bonjour Io faccio il cameriere e personalmente mi stanno sulle balle le persone che mi passano i piatti, finisce sempre che cascano le posate, il coltello fa cadere il bicchiere, che sbatte e si rompe sulla bottiglia dell’acqua, che a sua volta cade contro quella del vino rosso, che spacca il piatto e riempie di vino in cestino del pane e i menage che avevo appena pulito, e mentre tutto viene giù come le tessere del domino, la gente fa ancora più casino cercando di fermare i crolli, d’istinto si spingono via dal tavolo per non macchiarsi i vestiti mentre dietro sta passando un cameriere che ha appena sparecchiato 20 piatti che a mala pena riesce a tenere, e gli arriva puntuale un colpo di sedia che gli fa cadere i piatti e le posate, i bambini che stavano tranquillamente correndo per tutta la sala pestano i cocci dei piatti, finiti anche in magazzino, scivolano e si fanno male, tutti urlano tutti accorrono, ma nessuno si è accorto che la candela che stava sul tavolo è caduta anche lei e ha appiccato un incendio. Si, mi stanno sul cazzo le persone che passano i piatti.

  4. Onestamente io lo apprezzo quando mi allungano il piatto. Perché se ho un tavolo di 13 persone mi diventa impossibile destreggiarmi tra 13 sedie per prendere tutti i piatti diversi. Poi non so dove lavori tu, ma se mi metto a spostare gli avanzi di cibo da un piatto all’altro in sala da pranzo davanti ai clienti, come minimo mi tagliano la testa.
    Noi i residui di cibo li portiamo tutti in cucina, svuotiamo i piatti (uno per uno) nel bidone e li accatastiamo in ordine affinché il lavoro del lavapiatti sia più semplice.

    1. ben Monya, dal tuo commento si percepisce che forse potrebbe esserti utile cercare un vero cameriere e farti spiegare qualche tecnica basilare di servizio: potresti semplificarti grandemente la giornata e scoprire qualcosa di “nuovo” nella tecnica del servizio. In nessun posto dove vige la normale professionalità è ammesso accatastare i piatti “random” gli uni sugli altri al cameriere e men che meno giungere al plonche con la torre di pisa fatta di piatti/posate/avanzi e quant’altro. Se ne avrai occasione te lo suggerisco, ne avrai grandi vantaggi in termini di velocità di sparecchio, di praticità, professionalità ed anche….immagine personale!

      1. A lavoro sono contenti del mio operato, i miei manager non si sono mai lamentati per il mio modo di sparecchiare la tavola e anche loro, come me, apprezzano che gli si allunghi il piatto se c’è un tavolo con dieci sedie così non devono improvvisarsi acrobati

Diciamo che alla base c’è sempre l’educazione e il rispetto, passare il proprio piatto con le posate sopra è un gesto carino, accatastare i piatti di tutto il tavolo invece si trasforma in un gesto aggressivo e pretenzioso. La cosa più carina ed educata da fare per un cliente sarebbe quella di passare il piatto quando si è seduti in una posizione decisamente scomoda da raggiungere per il cameriere, altrimenti lasciare fare a chi lavora.

Deduco dai vostri commenti che del post di Enrico, voi tutti non avete intuito la sottile morale, ovvero che l’umiltà è la base di ogni relazione umana, a prescindere dalla tua carica lavorativa o dal tuo conto in banca. Poi, io personalmente da cameriere, so come deve essere effettuato un servizio doc, ma nulla vieta alle persone di potermi passare un piatto.

  7. Ma! Cos’è quest’articolo? Ora, per andare al ristorante, dobbiamo prendere la laurea?
    Ammettiamo che sia vero quello che voi dite, nessuno ha mai insegnato queste cose a noi clienti. A questo punto, scrivete in grosso nel menù: non passateci i piatti sporchi che fate solo casini e ci rompete le scatole.
    Io lo vedo sto povero cameriere che deve fare l’acrobata per raggiungere i piatti dall’altra parte del tavolo.
    Poi, quando passi il piatto e che il cameriere ti dice “grazie, molto gentile”, cosa dobbiamo capire? Che gli stiamo sui coglioni?

  8. il post incriminato non dice che la gente dovrebbe accatastare i piatti con cibo e posate, ma descrive un gesto del tutto diverso. Dice semplicemente che un gesto gentile può rinfrancare chi ti sta servendo, perchè mostra riconoscenza e consapevolezza del fatto che il ruolo di servito sia solo circostanziale. (Anzi, personalmente, la gentilezza mi rinfranca anche quando è maldestra.)
    I post acchiappalike sono altri. Non certo un post senza video, nè immagini, ma fatto solo di testo scritto, anche piccolo.
    Vorrei sapere dove lavora chi ha scritto l’articolo e quelli che sono d’accordo, in modo da evitare quei ristoranti, per non rischiare di essere così odiata per via di un’ intenzione gentile! O magari ci vado apposta, per farvi capire che se uno passa il piatto non è detto che lo passi con le posate o il cibo dentro, magari osserva cosa state facendo, e vi aiuta come può. Il post così tanto offeso diceva semplicemente questo! Boh forse sto Enrico gli avrà fatto qualcosa di male…

  9. Vorrei porre in evidenza una casistica che avete trascurato: i camerieri che TI CHIEDONO DI PASSARGLI IL PIATTO, o peggio allungano la mano come se il tuo fosse un gesto dovuto! Ce ne sono, e più di quello che pensate. Lungi da me credere ancora nella divisione in caste, ma viste le varie crisi economiche, precariato ecc, che porta i laureati a fare i camerieri, non più solo la pizzeria “ammiocuggino Pino” ha camerieri solo di nome, anche ristoranti più seri….. e pensare che quando ero bambino mi dicevano che il cameriere serve da destra e prende da sinistra (ho 54 anni, non 94)

  11. Il galateo a tavola ci dice tutto sulle posate, non solo come disporle nella fase di apparecchiatura ma anche come maneggiarle durante il pasto. Spesso si pensa che il modo piu consono di poggiare le posate nelle interruzioni del pasto sia verso il basso, con la punta sul piatto e la base sulla tovaglia. Niente di piu sbagliato: se le pietanze fossero a base di sughi, infatti, sarebbe facile in questo modo sporcare la tovaglia. Il galateo ci suggerisce quindi di porre le posate sul piatto con una disposizione che corrisponde alle 20.20 dell’orologio. Se, invece, volessimo segnalare al cameriere di aver terminato, ci bastera posizionare le posate rivolte verso l’alto parallele alle ore 6.30.
