Qui il problema non è nemmeno trovare datori di lavoro disposti a pagare dignitosamente quei professionisti.
Già, perché a conti fatti ci sono entrambi.
Ci sono i camerieri professionisti e c’è anche chi è disposto a pagarli.
Peccato però che non esistiamo.
O almeno, non quanto esistono i rider che portano da mangiare con le biciclette.
Già perché appena per loro c’è stato da battersi per i diritti, il ministero del lavoro si è subito messo in moto.

Di un’iniziativa lanciata da una pagina con oltre 158 mila follower, un crowdfunding senza supporto di alcun sponsor, che ha raggiunto l’obiettivo di inviare oltre 1200 braccialetti, arrivati sino in Giappone, per riunire in una giornata storica, quella del primo Maggio, camerieri, cuochi, ristoratori, bartender, pizzaioli, lavapiatti, baristi, tutti insieme per iniziare un processo di emancipazione, per elevare la natura di servitù del nostro lavoro a qualcosa di più importante a livello sociale, lo zero assoluto.

Eppure anche noi serviamo i vip, e i non vip (che per noi sono la stessa cosa), da mattina a sera, dal caffè al bar alla birra alle 3 di notte passando per pranzi, spuntini, aperitivi, cene, pranzi aziendali, di fine anno, di Natale e Ferragosto!
Però noi siamo anche quelli che tengono le mappe della città e raccontano ai turisti quali musei sono aperti.
Sono quelli che mantengono rapporti con il territorio, trasmettendo e coltivando tradizioni e culture locali.
Siamo quelli che prendono un lavapiatti e lo trasformano in cuoco.
Siamo quelli che offrono un lavoro al più imbranato dei camerieri spronandolo a diventare qualcosa di più.
Siamo quelli che girano il mondo per shakerare drink, imparando l’inglese meglio di quanto ci venisse insegnato a scuola.
Si è vero, siamo anche quelli che mettono annunci indecenti, che si propongono per posizioni ben al di sopra delle proprie capacità, siamo quelli che si drogano, che hanno seri problemi di alcool e con un turnover ingestibile.
Ma per voi al massimo siamo masterchef e 400 ristoranti stellati a quanto pare.

Siamo quelli che ignorate, quelli a cui non lasciate la mancia, quelli che non salutate quando entrate e vi fiondate su un tavolo apparentemente libero ma che in realtà è prenotato, quelli che discutono con il cuoco per farvi fare la variazione sul menù, la variazione sul cocktail, la variazione sulla pizza, quelli che vi danno le sigarette, che hanno sempre un accendino a portata di mano anche se non fumiamo, perchè sappiamo che può servire a voi, siamo quelli che a prescindere da come voi vi comporterete, quando andrete via, vi saluteremo con un “GRAZIE E ARRIVEDERCI”.

    Lasciare la mancia non è obbligatorio,ma per chi lavora bene andrebbe data o almeno così si ragiona in Italia.
    Penso che nel 2019 si dia più credito alle minoranze(vedi celiaci) che al restante mondo della ristorazione/bar etc.
