Il nostro lavoro è composto al 90% di “perché?”.
Per fare bene il cameriere, il cuoco, il barman e il pizzaiolo, il ristoratore e il lavapiatti, DEVI necessariamente chiederti il perché, il come, il quanto di ogni cosa che stai facendo tu, e spesso anche di quello che fanno gli altri.
Se non ti poni delle domande in questo settore prima o poi verrai fatto fuori.
Una regola buona per ogni momento della propria vita vero, ma chiedersi il perchè di ogni cosa è praticamente impossibile.
Non mi chiedo perchè uso il dito medio per digitare sulla tastiera del computer, o come dovrei essere dritto con la schiena mentre sono seduto.
Non mi chiedo come funzioni il telefono, la mia auto, quale sia il miglior smartphone da comprare, come curare al meglio questo raffreddore a Giugno, che prodotto usare per lavare i pavimenti a casa.
Scelgo a gusto, a caso, faccio scegliere a dei professionisti che pago per scegliere e pensare per me.

Quando entrate in un ristorante, noi, tutti noi, siamo pagati e dovremmo aver scelto il lavoro che facciamo, essenzialmente per trovare le risposte alle domande che vi ponete. Ma non basta. Il vero professionista non trova infatti solo risposte. Il vero professionista è quello che trova nuove domande da porsi.

Se vi provaste a chiedere quale genere di domande si deve porre un addetto alla ristorazione probabilmente iniziereste a pensare ad abbinamenti, ricette, soluzioni alternative e creative per un impiattamento, la garnish di un cocktail. Ma non solo il gusto, anche la comodità e la praticità, quindi il tipo di bicchiere, di piatto, di posate, coltelli utili con lama efficiente (e non quei cosi di acciaio inutili che spesso vi vengono dati in dotazione assieme alle forchette!), sedie comode, tavoli abbastanza grandi da poterci appoggiare qualcosa oltre quello che avete ordinato.
E la pulizia? Non ci dimentichiamo l’aspetto salute e sanitario di ogni cosa, e di conseguenza la praticità che ogni cosa deve avere per permettere un facile controllo e manutenzione per mantenere alti gli standard e non incappare in qualche sanzione dell’ASL.
Di esempi ed ambiti ce ne sono veramente un’infinità.

Ma la domanda più importante, quella riguarda veramente tutti, dal cliente al dipendente, fino al ristoratore, che tutti si dovrebbero fare e spesso nessuno fa è la seguente:
– perché un determinato prodotto ha quel PREZZO?
In base a cosa trovate sia corretto pagare 14 euro un primo a base di pesce?
Perché trovate giusto che un antipasto non debba costare più di 10 euro?
In base a quale criterio stabilite che un caffè non debba costare più di 1 euro, al massimo € 1,20?
Con quale criterio stabilite il giusto costo per il COPERTO?

Le risposte generalmente semplificano adottando un elenco di 5 fattori:
1) costo di materia prima
2) affitto/utenze/tasse
3) costo del personale
4) mutui
5) guadagno

La verità però è che quasi nessuno ha determinato attraverso questi fattori il prezzo dei propri menù.
Nella stragrande maggior parte dei casi i prezzi vengono decisi in base al mercato e calibrati in base a teoriche esigenze e scelte del titolare che deciderà attarverso una sorta di economia creativa, a cosa dare un valore e a cosa no.
Dei 5 fattori sopra citati, l’unico vero dato stabilito con certezza che grava sul prodotto finale è il costo della materia prima.
Tutto il resto è un insieme di costi più o meno certi nell’arco del mese o dell’anno, che possono più o meno essere suddivisi in settimane o giorni, così da determinare una base di spesa fissa da dover recuperare con gli incassi.

State leggendo, il ragionamento è coerente, ma non siete convinti.
Andiamo nello specifico allora.

Semplifichiamo (attenzione, è solo a titolo di esempio!) i 4 parametri fissi con costi realistici mensili:7

AFFITTO = € 2.000
UTENZE = € 1.000
TASSE (iva esclusa) = 2.000
COSTO DEL PERSONALE = € 10.000
MUTUO = 1.000
GUADAGNO = 4.000 (sennò che hai aperto a fare?)

N.b.: il guadagno ovviamente non è un costo, ma rientra in quello che dovrà essere il totale delle entrate necessarie a sostenere l’attività.

Ipotizziamo quindi un 20mila euro di spese fisse escluse la materia prima e l’iva che sono determinate grosso modo dal volume di affari.
20mila euro diviso 30 giorni fanno circa 660 euro al giorno di spese fisse.
Sono numeri tirati giù sommariamente ma penso che molti di voi sappiano che quando ogni giorno “alzano la saracinesca” sono già usciti almeno 500 euro dalle tasche del ristorante. Se non lo sanno è meglio che facciano una chiacchierata con il loro commercialista.

Ma torniamo ai 660 euro al giorno. Come pensate di recuperarli dal prezzo che date ad ogni prodotto?

Perché leggendo i dati sopra sono certo che chiunque avrà pensato per ognuno di quei fattori:
“Così poco?” – oppure – “Così tanto?”
“Solo 2 mila euro di affitto?” – e all’opposto – “Così tanto di affitto?”
Perché quelle voci di spese sono e possono essere enormemente differenti da ristorante a ristorante, da locale a locale, da bar a pizzeria e via dicendo.
Allora perché in una città, differenti attività fanno lo stesso prezzo per un caffè, anche se i chicchi vengono pagati dagli 8 fino ai 20 euro di media al chilo.
Come fa a costare uguale una birra media in 2 locali dove il primo paga 4 mila euro all’anno solo di suolo pubblico, ha 4 dipendenti in più del primo, e paga il doppio di affitto?

Il prezzo di mercato vale per i prodotti pronti al consumo, come un gelato confezionato, dove infatti i prezzi sono quasi sempre già consigliati dall’azienda che li produce, la quale consegna al rivenditore le classiche locandine con i prezzi già stampati.
Per tutto il resto sono troppi e troppo differenti i fattori per uniformare in questo modo i prezzi dei menù. Non c’è una vera logica nello stabilire che per partito preso, una birra bionda media, DEVE COSTARE tra i 4 o i 5 euro.
Ovvio che il mercato stabilisce a quale prezzo sia più accettato e giusto venderlo un prodotto. Ma siete certi di potervi permettere di rientrare in quel range con i vostri prodotti?

E vi ricordiamo che il prodotto non è solo il caffè, ma anche la manodopera in cucina, così come il servizio e la sua qualità in sala.
Per quei prodotti esiste un costo teoricamente sancito dal CCNL del Turismo. Quindi di quel “prodotto”, si sa già quanto dovrebbe essere il costo. Ma l’azienda vostra (o per cui lavorate) ha calcolato se può permettersi di rientrare in quel range di spesa?

La verità è che la risposta non ce l’avete, non l’avete cercata e buona parte di voi, di noi, nemmeno si pone la domanda.

Finchè vi saranno domande senza risposta, tutti avranno il diritto di dire quello che gli pare, i clienti di scrivere recensioni senza senso e i titolari di avere esigenze pressanti.
I dipendenti, di sala, bar, pizzeria o cucina che siano, avranno a quel punto l’arduo compito di districarsi tra gli uni e gli altri, cercando di far quadrare una realtà senza né capo né coda.
Esattamente come è ad oggi la realtà ristorativa italiana.

Un consiglio? Provatevi a chiedere il perché di ogni cosa che fate da adesso in poi.
A cominciare dal “perché” dovreste farlo ovviamente.
