Occca nasce come pagina facebook il 10 giugno 2015.
A distanza di un anno conta 70mila like e milioni di utenti raggiunti ogni settimana dalle varie occcate che vengono condivise, commentate da più di 100mila persone.
Per prima cosa un ringraziamento ad Alfonso UFF Amarante, l’illustratore senza il cui aiuto forse non avrei iniziato questa avventura. Quello che per me era importante fin dall’inizio era dare un’immagine estetica professionale di OCCCA, creando così quella che in gergo viene definita un’immagine coordinata, una matrice riconoscibile.
Se uno dei grandi problemi della ristorazione è la comunicazione come potevo pensare di parlare, senza rendere la stessa pagina di OCCCA, un esempio di come la comunicazione va organizzata.
Molte volte sento camerieri lamentarsi di come i propri datori di lavoro spendono e investono soldi in ristrutturazioni, allestimenti del locale, prodotti dal nome invitante, e poi magari si continuano ad usare attrezzature fatiscenti ed obsolete che con qualche centinaio di euro potrebbero essere sostituite per migliorare l’organizzazione del lavoro: contenitori per la cucina, qualche posata in più, sostituire dei piatti sbeccati, 4 zinali di riserva e via dicendo.
Ci sono dettagli che fanno la differenza, e senza quell’OCA sulla quale abbiamo perso mesi di tentativi, OCCCA non sarebbe stata la stessa cosa.
anniversariologoMa ora guardiamo al futuro. Cosa vuole diventare OCCCA?
Ci sono tanti progetti in ballo, tanti nuovi amici sparsi per l’italia, cuochi, camerieri, ristoratori, che in questo anno ho conosciuto grazie alla pagina o attraverso il gruppo facebook OCCCA CLUB ITALIA. Persone che hanno compreso la missione di OCCCA e vorrebbero fare qualcosa, qualcosa per tutti noi, perchè siamo circondati da una marea di problemi, di dettagli che da soli non abbiamo ne tempo ne modo di affrontare.
Tasse ingiustificate, difficoltà a competere con realtà che poco hanno a che fare con il nostro lavoro, ma che non aiutano affatto in quel percorso di educazione del cliente (vedi il discorso ALL YOU CAN EAT), false aspettative dei nuovi talk show fino ad arrivare all’ormai riconosciuta EMERGENZA SALA, ovvero, quella grande difficoltà che si inizia sempre più a percepire, nel trovare personale di sala qualificato o da far crescere nella propria azienda.
Il primo grande aiuto lo abbiamo trovato in amici del settore comunicazione con i quali abbiamo potuto migliore e potenziare il nostro advertising:
– FABIO TOMASSINI, regista, film maker, montatore, nonchè realizzatore del sito sul quale state ora navigando.
– CLAUDIO D’ALOIA, con il quale abbiamo sperimentato i primi video, per poi seguire nel backstage i tanti progetti e produrre materiale fotografico esclusivo per il sito.
– DANIELE CRUCCOLINI, direttore della fotografia nelle riprese del video della canzone SONO CAMERIERE, che tornerà operativo per nuovi progetti.
Con questa squadra abbiamo la possibilità di aumentare la visibilità di OCCCA.
La visibilità è necessaria per poter riuscire in futuro a sviluppare progetti.
Ci sono locali che propongono un’offerta qualitativa eccellente, ma non si sprecano nel pubblicizzarla perchè si aspettano che i clienti trovino l’eccellenza da soli. Non intendiamo fare anche noi quell’errore che in parte ha portato la vera ristorazione, quella di qualità, ad essere taciuta da mercati meno attenti al prodotto e più all’immagine.
Intendiamo aumentare la nostra visibilità solo al fine di poter un domani, sempre più vicino, proporre iniziative e progetti sul territorio.

Un’APP, un calendario, un gioco di carte e tanti altri video.
Questi sono alcuni dei progetti che vorremmo riuscire a realizzare nel prossimo anno.

Il primo su cui stiamo lavorando è un APP. Non un giochetto per il vostro smartphone (oddio, anche a quello in realtà stiamo pensando, ma in chiave più didattica), ma una vera e propria applicazione che riesca in un solo click a:
– mettere in contatto addetti del settore
– agevolare la ricerca di personale da parte dei ristoratori, e trovare lavoro ai dipendenti
– definire un nuovo metodo di valore sia dei RISTORATORI, sia dei LAVORATORI, attraverso un voto liberamente ispirato alla guida Michelin, dove però i giudici sarete voi, tramite la stessa applicazione.
Riuscire a creare una APP che faccia tutto questo in maniera intuitiva, alla portata di tutti, GRATUITA e che permetta in maniera efficiente e naturale di sviluppare i 3 processi sopra elencati, non è cosa da poco, ma servono progetti pratici e concreti oltre alle parole per dare una svolta.
Un altro grande progetto su cui stiamo lavorando, per quanto potrebbe sembrare banale è un calendario da far uscire a fine anno. No, niente foto di bariste succinte o cuochi tanto belli quanto assenti dai fornelli. A tempo debito vi parleremo anche di questo.
Abbiamo pensato, e già tirato le basi per un gioco di carte didattico, che non poteva che chiamarsi IL GIOCO DELL’OCCCA ovviamente!
Le risorse sono poche, di tempo specialmente. Chi vi scrive lavora nei feriali in un locale del centro, per poi farsi i classici catering del fine settimana. Ognuno poi ha i suoi problemi, ma sapete come si dice in questi casi no?

Quindi bando alle ciance e torniamo a lavorare che di cose da fare ce ne sono tante!
