Un unico comun denominatore di queste storie: finiscono tutti a lavorare nei ristoranti, nei locali, pub, discoteche e locali vari.
Allora la riflessione è:
Ma questa categoria si potrà mai elevare a qualcos’altro di più strutturato, serio, “professionale” per quanto poi per professionale tocca vedere che intendiamo, perchè spesso i più borderline sono quelli più professionali all’interno della loro postazione, del loro orario di lavoro (il DOPO LAVORO poi è un’altra questione!).
I vari ristoranti stellati, i vari vip della ristorazione, sono comunque una netta minoranza rispetto la grande massa di attività e dipendenti che ruotano nel nostro mondo.
La realtà del mondo della ristorazione la facciamo noi “OCCCHE”, di cui spesso al di fuori di quel mondo nessuno sa realmente cosa succede, che poi è il motivo per cui ho pensato di creare questo progetto con delle finalità che a volte io stesso non riesco a capire ne valutare.
Io ci vedo del buono, e anche qualcosa di coerente nel nostro lavoro, nel nostro saper essere parte della società con i suoi pregi e difetti, vizi e virtù.
Abbiamo una grande capacità di adattamento e solidarietà quando non siamo vincolati a quei limiti che ci imponiamo durante il nostro lavoro, verso il cliente e la necessaria etichetta che il mondo del commercio richiede.
Tra di noi, ho sempre visto una grande capacità di comprensione in fin dei conti. Con tutti gli scleri di contorno ovviamente e le follie che ci circondano.
Ci evolveremo in qualcosa? Ma soprattutto il mondo e la società che velocemente sta cambiando, avrà un posto per noi? Oppure quel posto dovremo crearcelo?
Al momento le grandi catene e i piccoli franchising, stanno dettando le regole.
L’Italia è una paese fortemente legato a tradizioni e stili di vita che hanno poco a che fare con il capitalismo e l’attuale cultura occidentale stile americano-nordeuropea.
Vediamo cresce gli ALL U CAN EAT, e i grandi mercati del cibo come EATALY e similari, che tendono a voler dare una forma regolamentata, fatta di orari, di turni.
Ma poi se vai a vedere vengono comunque fagocitati dalla realtà della ristorazione quella vera, che non si lascia facilmente imbrigliare dalle regole dell’industria e del grande mercato.
Un Mc Donald (nato nella capitale di quella cultura) può riuscire a mantenere la sua coerenza, ma quando ti sposti in strutture più nostrane, scopri che il gioco non regge, perchè se vuoi trasformare l’ambiente da ristorazione in qualcosa di strutturato finisci con il cozzare con le ore di lavoro necessarie e la professionalità in strutture come EATALY (almeno per quello che mi hanno raccontato) facendo si che stipendi non sempre ottimi e orari logicamente fuori portata da contratti nazionali, portano il professionista a scappare, e il non professionista urlare alla schiavitù (fatti una stagione come dico io e poi vedi se da Eataly pensi ancora che sono schiavisti!).
Insomma, chi vive in questo settore da più di 10 anni credo che conosca la realtà di cui parlo.
Mi chiedo dove andremo e se mai riusciremo a resistere.
L’idea che mi faccio oggi è un pò marinaresca.
Noi siamo come marinai, alla ricerca dell’oro, con i nostri codici etici non scritti, ma a cui teniamo spesso più delle regole ufficiali.
La “parola” e la stretta di mano, ancora resistono, per quanto rischiose.
