LDO Il lavapiatti 01 - OCCCA.itGià mi pare di sentire quel cameriere che va sempre di fretta e dice al lavapiatti di turno – “Te li lascio qui che devo correre a un tavolo” – o molto più mestamente li lasciano e danno per scontato e dovuto che sia il lavapiatti a doversi preoccupare di ripulire ogni singolo piatto ed evitare magari che pile incastrate tra di loro non collassino in quella cacofonia inconfondibile che precederà il poi immancabile:
“E io pagooooooo!”

In questi casi è sempre valida la regola che dice:
“A farla bene o farla male ci vuole lo stesso tempo”

Seriamente, il lavapiatti spesso è solo, e se ce ne è più di uno, significa che la mole di lavoro è almeno tripla. Il tempo che ognuno potrebbe dedicare a lasciare i piatti alla plonge in maniera ordinata è una minima parte se suddivisa equamente tra tutti, a differenza di quel povero cristo, spesso sottopagato, che si ritroverà a pulire piatti appiccicati l’un altro da ogni ben di dio lasciato dal cliente ormai sazio.

Inoltre ricordiamo che arrivare alla plonge con una pila scomposta di piatti stile sandwich a strati composti di avanzi e posate è sintomo di un’errato sbarazzo del tavolo.
In particolo se lo sbarazzo è avvenuto con il cliente ancora seduto.
Tecnicamente bisognerebbe arrivare dal lavapiatti con:
–  1 pila di piatti impilati senza alcunché in mezzo tra loro, e in capo al massimo l’ultimo piatto prelevato dal tavolo con relativi avanzi e posate.
– 1 piatto dove avremo mano mano scaricato gli avanzi presenti negli altri piatti da un lato e le posate nella disposizione classica: forchette sovrapposte e coltelli inseriti nella curvatura di quest’ultime.
Il numero di piatti massimo che potremo portare alla plonge è essenzialmente dato da 3 fattori:
1) il peso che riusciamo a caricare senza dover assomigliare al gobbo di Notre Dame
2) la quantità di cibo che possiamo caricare nel piatto dove andremo a scaricare.
3) la quantità massima di posate che possiamo posizionare senza correre il rischio che cadano durante il tragitto dalla sala al lavaggio.
Se tutte queste operazioni verranno eseguite correttamente, una volta arrivati alla plonge il tempo impiegato per lasciare in maniera scomposta i piatti o sistemati e ordinati nel modo corretto sarà praticamente uguale.
Al contrario sarà migliore la condizione di lavoro nel lavapiatti e soprattutto rischieremo meno facilmente di arrivare a metà serata con la necessità di dover appoggiare i piatti a terra o creare postazioni secondarie dove riporre lo sporco.
