Quante volte vi è capitato? A me tante, specialmente nei primi 10 anni di questo lavoro. Alla fine probabilmente amici e parenti si devono essere rassegnati, più che riconoscere, che il CAMERIERE sia un vero e proprio lavoro.
Già perchè a meno che uno non venga da una famiglia di ristoratori e abbia seguito gli studi all’alberghiero, se sei uno dei tanti che è passato dal lavoro occasionale a capire che lavorare in sala non era solo un modo per fare i soldi il fine settimana, ma qualcosa di più, avrai difficoltà spesso a farlo capire a chi ti conosce.
Gli sembrerà sempre, che “nel frattempo” tu stia continuando a lavorare in un ristorante mentre…
…mentre in realtà è quello il lavoro che vorresti fare!
Magari non restando in quel ristorante.
Magari lavorando in altri locali per fare maggiori esperienze.
Anche li sembrerà che passi da un ristorante ad un altro per necessità.
Inutile dire invece, che se oggi dici in giro che stai facendo un corso da cuoco, tutti ti guarderanno con ammirazione dicendo in giro che hai deciso di diventare “Chef”.

Probabilmente se oggi dicessi che intendo spendere 5mila euro per un corso da cameriere, molti mi prenderebbero per scemo (e forse è così). Ma è anche vero che sono pochi gli “chef” che usciti da una scuola, seppur valida, riusciranno ad affermarsi sia lavorativamente che economicamente, e che un vero capopartita non arriva comunque a prendere tanto di più rispetto ad un vero maitre o direttore di sala.
La strada è lunga per chi lavora in sala, ma chi ha qualche decade ricorda come fino a 20 anni fa, il cuoco, non fosse il divo che è oggi.
Se ci sono riusciti loro che stanno nascosti in cucina cosa lo impedisce a noi?
Nel frattempo teniamo duro e quando ci chiederanno che lavoro facciamo, diciamolo con chiarezza: SONO CAMERIERE.
Ciao ragazzi di Occca. Sono fortemente convinto che prima o poi i ristoratori si renderanno conto che il successo del locale dipende molto (e molto di più rispetto al passato) da ciò che accade in sala.
L’offerta ristorativa sta diventando sempre più un’esperienza e va molto al di là di mangiare un buon pasto.
Per questo mi auguro che possano investire, oltre che nel personale di cucina, anche nei camerieri professionisti.
