Ok, lo sappiamo tutti, gli chef in primis, che i camerieri hanno poco tempo per mangiare e spesso il pasto è striminzito, ma c’è sempre uno nella brigata di sala che sembra non avere un fondo nello stomaco, lo chiameremo per praticità il cameriere affamato.
Sta li al pass ad elemosinare un piatto di qualsiasi forma e colore per poter mangiare qualcosa che non sia la stessa pasta al pomodoro che gli rifilano alla mensa del personale, sempre se la giornata lavorativa permette di mangiare.

Le giornate preferite dal cameriere affamato sono quelle piene di banchetti e cerimonie dove ci sono buffet da smontare con ogni tipo di frittura, crostino o affettato, perché lui sà già che, al momento dello sbarazzo, la sua fame morbosa verrà lentamente placata.
Il tutto si svolge nel tragitto dal buffet alla zona lavaggio, e se il cameriere è veramente fortunato il “furto” si svolge in un corridoio lontano da occhi indiscreti.
Solitamente il CAMERIERE AFFAMATO è il primo ad accaparrarsi il piatto o i piatti che avanzano tra una portata e un altra di un matrimonio o cena di gala. A volte è solidale verso i suoi colleghi e pensa anche a loro nascondendo o mettendo da parte vivande non consumate e intatte.
Il cameriere affamato è anche ricco d’ingegno, è quello che al servizio della colazione, quando ci sono le uova alla carta, è il primo a scofanarsi un omelette con bacon, pomodoro, funghi e spinaci, scrivendo una comanda per un qualche tavolo e poi recarsi in cucina dicendo anche “oh! certo ‘sta gente ma quanto mangia di prima mattina?” e il malaugurato chef delle colazioni tra una blasfemia e l’altra prepara l’omelette con amore, senza sapere che nessun cliente vedrà quel capolavoro.

Per quanto riguarda la mia esperienza io non sono il cameriere affamato, perché ho in mente la risposta che il mio maitre mi propinava ogni volta che mi lamentavo del fatto che avessi fame e la conversazione finiva sempre in questi modi:
“Ma io non ho mangiato!”
“Meglio! In guerra ci si va a stomaco vuoto”
O per la versione estiva, l’evergreen:
“Meglio! Vuol dire che non devi aspettà per fa i’ bagno!” – e con un pacca sulla spalla mi rimandava in sala.
O come diceva Steve Jobs:
“Siate folli, siate affamati”
Mi sa che anche Steve Jobs ha fatto il cameriere.
