Abbiamo già scritto poco tempo fa in un articolo come e perché i BARMAN (bartender, mixologist e tutte le loro varianti) presto scalzeranno gli CHEF dal podio di star della ristorazione.
Per farvelo capire meglio, per mostrarvi quanto questa categoria abbia complessivamente fatto passi avanti rispetto ai suoi colleghi vi illustrerò attraverso 3 concetti chiave, alcune pratiche ormai divenute consuetudine nella cosiddetta “industry” del settore, che stanno diventando comuni anche nei locali meno famosi delle grandi metropoli (a riprova del fatto che non è pratica esclusiva solo dei soliti locali noti).
– LA DRINKLIST
Partiamo subito dal pezzo forte!
Mentre in forum e gruppi facebook, formatori di ristoratori cercano di insegnare ai titolari di pizzerie e ristoranti gourmet come usare il menù in tutte le sue sfaccettature più sottili o banali, non solo per comunicare legalmente il prezzo della propria merce, ma per condurre un vero e proprio upselling, incitamento all’acquisto o, come ha decodificato in Italia il guru Lorenzo Ferrari “ingegneria del menù”, in moltissimi cocktail bar sono andati oltre.
Oltre il concetto di drink cost.
Oltre il concetto di assenza dei classici, per proporre con nome accattivanti ricette proprie (nel mondo della pizzeria per esempio c’è chi prova a eliminare la Margherita dal menù sembrando eretico!)
Oltre il modello che vuole nell’aggiunta dell’ingrediente esotico, o il nome evocativo, la possibilità di alzare l’asticella del prezzo senza per questo indispettire il cliente pretenzioso (così che la polenta possa diventare “crema di mais” per essere venduta a 2 euro in più).
Ci sono cocktail bar che ciclicamente cambiano il loro menù, andando a inserire in prima pagina quelli che vengono chiamati “SIGNATURE” che altro non sono che ricette originali di drink, creati dai propri bartender/mixologist.
Ricette che spesso prevedono l’uso di homemade, ovvero liquori, sciroppi, cordiali e altre “pozioni magiche” create appositamente per dare un’esperienza unica e irripetibile al cliente.
Tutto questo spesso accompagnato da un vestito creato ad hoc per dare una connotazione specifica, un messaggio, un’identità.
Ecco allora che compaiono menù che sono vecchie cassette musicali, dove i nomi dei signature diventano titoli di canzoni, e i testi le loro ricette!

Manuali botanici dove il drink prende il nome dell’elemento caratteristico del drink: LIQUIRIZIA, se il drink ha al suo interno un liquore di liquirizia, LAPACHO se nella ricetta c’è l’omonima tisana. Semplice, persino banale, ma diretto ed efficace.

C’è chi arriva a creare piccole raccolte fondi per gli scopi più nobili, come nel caso dei ragazzi di Ca.Bo. che hanno aumentato di un euro alcuni drink che nelle stesse ricette avevano un richiamo a specie in vie di estinzione per le quali sono poi stati destinati i proventi attraverso una Onlus che si occupa di loro.
Informazione, sensibilizzazione e azione diretta!
Tutto dentro ad un “semplice” menù.

Qualcuno penserà che uno stile del genere non si adatta alla sofisticatezza ed eleganza del tovagliato bianco e le posate d’argento di un ristorante, ma state solo confondendo il contenuto con il contenitore.
Per inciso, il contenitore è tanto il menù cartaceo (o come qualcuno propone, in digitale tramite Tablet – vedi OLTRE con la sua carta dei vini), quanto la cara vecchia lavagna appesa al muro o messa all’ingresso del locale.

L’attenzione per la cura delle drinklist da parte dei bartender, fa si che spesso a livello di “contenitore”, i loro menù siano decisamente più presentabili di quelli di molti ristoranti che quotidianamente stampano su fogli a4 la proposta del giorno (che spesso varia di 2 piatti al massimo).
La drinklist di questi cocktail bar, con la sua lunga preparazione, spesso gestita a livello di grafica da esperti esterni e poi mandata in stampa, richiede un tale livello di tempo ed energie che porta inevitabilmente una maggiore attenzione sotto vari punti di vista.
In primis sull’offerta, che in qualche modo verrà bloccata per tutto il periodo in cui quella drinklist verrà mantenuta fino a nuova ristampa e nuovo progetto.
Ecco che allora i bartender, insieme al loro staff, tenderanno a ragionare automaticamente alla stagionalità, reperibilità e prezzo di mercato dei prodotti che useranno in quel determinato periodo.
Questi menù diventeranno automaticamente un forte mezzo di persuasione verso una parte di clientela che verrà attratta da alcuni drink rispetto ad altri.
E non parliamo solo dei signature.
Un cocktail bar ha a sua disposizione una quantità notevole di distillati e liquori con i quali poter proporre una vasta gamma di cocktail.
Viene da se però, che se sulla drink list si costruirà una pagina solo con variazione di SPRITZ, dal classico Aperol al più secco Bitter Spritz, con il modaiolo Hugo e l’iconico Select, la versione bianca veneta o quella con qualsiasi amaro che vi venga in mente adatto allo scopo, se per controparte gli altri classici aperitivi a base di Vermouth e Bitter come Americano e Negroni vengono inseriti in una non determinata categoria “COCKTAIL a 6 euro”, una buona fetta di clientela sarà portata a scegliere uno tra gli Spritz.
Viceversa se si opterà per una lunga scelta di varianti a base Vermouth e Bitter e si sceglie addirittura di non mettere in carta lo Spritz, quest’ultimo verrà probabilmente ordinato a prescindere, ma in maniera nettamente minore rispetto all’altro menù.
Pensate ora al menù di un ristorante.
Spesso capita di avere genitori che chiedono una pasta “semplice”, al sugo o in bianco, e come lo Spritz non inserito in carta, il cuoco potenzialmente potrà comunque prepararla.
Se in carta però è presente un primo di non difficile comprensione per il palato del piccolo, a volte è l’occasione per i genitori di fargli provare qualcosa di diverso dal solito piatto di penne condite con “solo olio e parmigiano a parte”.
Viene da se invece che se in carta metterete sia la pasta in bianco, sia la pasta al sugo semplice, questa sarà automaticamente la scelta primaria per i piccoli clienti.
Lo stesso discorso però vale anche per i grandi.
I menù dei cocktail bar con i loro signature arrivano persino a creare dei veri e propri eventi per la presentazione dei nuovi drink, quasi fossero i nuovi modelli di una casa di moda. La scoperta, il piacere, la sorpresa, sono tutti elementi che il cliente conquistato da questo metodo cercherà e lo porterà a tornare costantemente per scoprire qualcosa di nuovo, o bevendo un classico nell’attesa.
Immaginate ora di provare a fare lo stesso nel vostro ristorante, nella vostra pizzeria o perfino gelateria o pasticceria.
Il punto forte di questi cocktail bar è da una parte garantire sempre una scelta di classici, drink famosi e proprie creazioni, dall’altra una turnazione costante nel tempo di drink irripetibili.
Questo modus operandi crea una condizione di movimento e rinnovamento che permette ai cocktail bar di fidelizzare clientela nuova e di mantenere la vecchia, evolvendosi con essa.
C’è poi tutto un mondo che si apre sulle collaborazioni con i brand interessati a essere parte di queste drinklist esclusive, ma è un argomento da affrontare in un secondo momento.
– LA LAVAGNA
Qualcuno penserà di potersela cavare con la lavagna dove sono scritti i piatti del giorno. Ecco, scrivere i piatti del giorno non è proprio come mantenere per 3,4 o 6 mesi dei signature, ma lasciatemi spendere due parole solo sul contenitore stavolta, lasciando perdere il contenuto (anche perché vale esattamente lo stesso principio del menù cartaceo).
Le lavagne sono contemporaneamente un quadro appeso nel vostro locale come un qualsiasi arredo, un mezzo per comunicare in maniera non verbale ai vostri clienti, un biglietto da visita di chi siete.
Ora, affidereste voi la vostra immagine, più precisamente l’estetica della vostra immagine, alla capacità grafica di un bambino delle elementari?
E perfavore che nessuno provi a tirar fuori la storia dei bambini che sono carini, pucciosi, candidi etc etc. Non è del disegno di vostro nipote che avete attaccato sul frigorifero che stiamo parlando.
Durante un corso di formazione ho conosciuto il titolare di un cocktail bar che mentre aspettava di aprire l’attività, oltre a formarsi ulteriormente (bene ricordarlo!) si stava dedicando all’arte della tipografia per sfruttarla nel suo locale.
Guardate già la semplice differenza che può fare un cartello per segnalare i propri orari.

A tal proposito vi ricordo, e se non lo sapevate, vorrei che ve lo stampaste, quello che è il primo assioma sulla comunicazione di Watzlawick:
“Non si può NON COMUNICARE”
Voi lo fate con tutto quello che fate, avete e mostrate, soprattutto, nel vostro locale, nel vostro profilo facebook o Instagram.
Se non siete su Instagram, la vostra assenza sta comunicando per voi.
Il che non è di per se una cosa negativa. Però dovete essere coscienti di quello che state comunicando con quella assenza.
Sarà che i barman oltre a prepare, ragionare, inventare, calcolare e ottimizzare tutto quello che riguarda il loro palcoscenico detto anche “bancone”, con i clienti ci parlano e comunicano. A volte anche senza parlare.
A volte nei ristoranti si fa già fatica a far parlare cucina con sala, figuriamoci prendere il confronto tra i due reparti e relazionarne una sintesi al ristoratore che dovrebbe a quel punto assimilare i feedback e usarli per una comunicazione efficiente!
Per questo consiglio di osservare il mondo del bar che ha la facilitazione di avere spesso in un’unica figura tutte e 3 le necessarie:
– elaborazione prodotto
– vendita e servizio
– gestione dell’impresa (in molti casi il barmanager, come lo chef, è il titolare dell’attività)
– CUCINA CIRCOLARE, ECOLOGIA, SPRECO
Sia chiaro, i colleghi barman non si inventano nulla. Anzi, molto spesso prendono spunto proprio dai cuochi. Basti pensare alla cucina molecolare applicata da Comini nei suoi drink figli a modo loro dell’estro e genio di Ferran Adrià, padre di questa disciplina.
Ma ancora oggi se si pensa al riuso di ogni parte di un ingrediente così da non risultarne alcuno spreco, il termine usato è “cucina circolare”.
Ma, seppur apparentemente facilitati nella gestione di meno materie prime, sarebbe il caso di iniziare a parlare di MISCELAZIONE CIRCOLARE, non tanto per i risultati ottenuti ma per la dimensione della loro emulazione.
Perché se è vero che esistono ristoranti che hanno fatto dello zero spreco il loro punto di forza, c’è da dire che questi sono una netta minoranza di un modello che scarsamente si adatta a quello imperante di cucina e gestione di un ristorante classico.
Oggi invece troviamo un essiccatore in moltissimi bar che viene usato per preparare decorazioni o ridurre in polvere foglie e altri scarti da usare nei modi più disparati. I semplici agrumi vengono usati e riusati in ogni modo. Persino l’albedo (la parte bianca e amara attaccata alla buccia) viene sfruttata.
Edoardo Nono di Rita’s Tiki Room a Milano raccontò durante una masterclass che per lui l’ananas è come il porco: non si butta via niente! Dalle lunghe foglie per le garnish, al succo del frutto fino all’uso delle bucce che sono perfette per creare fermentati o tepache.
Le stesse competizioni indette dai grandi brand puntano spesso all’uso completo di un elemento per dare rilevanza a questa pratica no waste.
Che dire poi della battaglia per eliminare il più possibile le cannucce?
Quest’anno abbiamo letto più volte della legge ormai prossima in Europa che abolirà l’uso di plastica usa e getta.
I barman non si sono fatti attendere e questa estate abbiamo seguito con piacere come tanti di loro abbiano deciso tout court di eliminarle completamente dalla propria linea, anche in quei cocktail bar estivi sul lungo mare per i quali potrebbe sembrare impossibile vietare una certa comodità ai propri clienti.

Questi 3 fattori pongono in questo momento il mondo della miscelazione in un ottica moderna e quasi all’avanguardia del settore ristorativo, un settore dove ancora si discute di come impaginare un menù, di come proporre novità che novità spesso nemmeno sono più per dei clienti sempre più competenti o che ha difficoltà a capire che la stagionalità non è solo un modo per mettere in pratica un’etica, ma anche un’economia di forza della propria attività.
In ogni città d’Italia, spesso anche in piccole realtà da poche decine di migliaia di abitanti, stanno crescendo e affermandosi cocktail bar di livello. Quando a fine servizio chiudete, piuttosto che la solita birretta andate a spendere qualche euro in più in uno di questi locali. Osservate e rubate con gli occhi.
